Do-Ahead Mashed Potatoes

These are so good, you may never prepare the traditional way again!<
  • 10 potatoes ( around 5 lbs.)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1/4 cup butter
  • 1/2 cup milk
  • 2 eggs
Cook potatoes. Mash.
Add cream cheese, sour cream and butter.
Combine milk and eggs, blend well. Add egg mixture to potatoes and mix well. Put in greased casserole dish.
Bake in a preheated 350 degree oven for 30-45 minutes.

May be made a day ahead.
Just bring to room temperature before baking in 350-degree oven for 1 hour.
