Poppy Seed Pound Cake Muffins

  • 2 cups flour
  • 1/4 teaspoon baking sod
  • 3 teaspoons poppy seed
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup butter or margarine
  • 1 cup lemon yogurt
  • 1 teaspoon vanilla extract

In small bowl, combine flour, poppy seeds, salt and baking soda. Set aside.
In large bowl, cream sugar with butter or margarine. Add eggs, one at a time, to sugar mixture. Blend well.
Beat in lemon yogurt and vanilla.
Add flour mixture to sugar mixture. Mix well.
Pour into lined muffin pan.
Bake in pre-heated 400 degree oven for 15-20 minutes.
