Stuffed Peppers

  • 2 large green peppers, halved, seeds & membrane removed
  • 1 lb. lean ground beef
  • 1/2 cup white rice
  • 1 small onion, chopped & sauteed in margarine or butter
  • 2 eggs, beaten
  • 3/4 tsp salt
  • 1/4 tsp pepper
Sauce:
  • 1 15 oz. can tomato sauce
  • 1 14.5 oz. can diced tomatoes * See note below
  • 1/4 cup light brown sugar
  • 1/3 cup lemon juice
Hint: Mix the sauce in a small pan over low heat to be sure the sugar dissolves.

Cook rice per instructions, let cool.

In large bowl, combine beef, cooked rice, onion, eggs, salt & pepper. Mix well, then stuff the pepper halves.

Mix sauce ingredients. In a Dutch oven or glass pan, put enough sauce to cover the bottom.

Arrange peppers, meat side up. Spoon most of remaining sauce over peppers.

Cover & place in a 375 degree oven for 1 & 1/2 hours.
Uncover & bake for an additional hour, basting occasionally.


*Note: Some people like a side of baked or mashed potatoes with their stuffed peppers. If you do this increase the diced tomatoes in the sauce to 2 cans, then you'll have extra sauce to top the potatoes.
